Change "sex" field in client details & portal

Change the "sex" field in client details and on the client portal because it doesn't reflect the terms we use.

    I would like the ability to remove the "Sex" category from a SuperBill. This category is legal gender and if someone is Trans or Nonbinary, but sees this on their Superbilll, it can be rather disheartening.
